In the South, you better have a go-to-cake recipe for your loved ones! This Sundrop cake recipe is a recipe that became a family staple and represents to me the warm hospitality that Southern folks are known for. My grandma always had one ready to share with family, neighbors, friends, and anyone else lucky enough to stop by for a visit. We hope you enjoy making it and sharing it with your loved ones!
Creating the Sun Drop Cake Magic
This one bowl bundt cake recipe is as quick and simple as it gets. Starting with room temperature butter, cream the butter and shortening with a mixer. Once incorporated, slowly add the sugar as you mix. Next, add the eggs one at a time, allowing the batter to incorporate each egg before adding the next. Finally, add the lemon and vanilla extract flavoring and mix batter until creamy and smooth.
Prepping the Pan & Baking the Pound Cake
Grease your 10 cup bundt pan with butter, oil spray, or shortening then dust with flour. Do not skip! This step is crucial to ensure your cake comes out clean and perfectly shaped! Bake your bundt cake at 325 degrees for approximately 1 hour and 15 minutes. To check the doneness of your cake, insert a toothpick or metal skewer. If it comes out clean, your cake is fully cooked through.
The Icing on the Cake
While the cake is baking, make the icing. Heat the butter in the microwave or on the stovetop until melted. Let cool slightly and transfer to a mixing bowl. Add in the Sun Drop or other lemon-lime soda. Slowly mix in the confectioners sugar about 1/2 cup at a time until fully smooth and no lumps are left.
This step is what makes this cake recipe quick and easy. No need to wait for your cake to cool before icing! After popping the cake onto a platter or cake stand, simply drizzle or pour the icing over the top and let the fresh-baked warmth of the cake do it’s job. Enjoy watching as the icing runs along the sides of the cake for an impressive and inviting finish.
