The Bundt Pan: A Homemaker’s Secret Weapon

Every Southern bell knows the secret to an impressive, but easy dessert is a her handy dandy bundt cake pan. The small but mighty bundt pan effortlessly transforms a humble cake into a beautifully shaped dessert that is sure to impress. Bundt cakes are just timeless! And incredibly easy to whip up for any occasion.

Creating the Sun Drop Cake Magic

This one bowl bundt cake recipe is as quick and simple as it gets. Starting with room temperature butter, cream the butter and shortening with a mixer. Once incorporated, slowly add the sugar as you mix. Next, add the eggs one at a time, allowing the batter to incorporate each egg before adding the next. Finally, add the lemon and vanilla extract flavoring and mix batter until creamy and smooth.

Prepping the Pan & Baking the Pound Cake

Grease your 10 cup bundt pan with butter, oil spray, or shortening then dust with flour. Do not skip! This step is crucial to ensure your cake comes out clean and perfectly shaped! Bake your bundt cake at 325 degrees for approximately 1 hour and 15 minutes. To check the doneness of your cake, insert a toothpick or metal skewer. If the probe comes out clean, your cake is fully cooked through.

The Icing on the Cake

While the cake is baking, make the icing. Heat the butter in the microwave or on the stovetop until melted. Let cool slightly and transfer to a mixing bowl. Add in the Sun Drop. Slowly mix in the confectioners sugar about 1/2 cup at a time until fully smooth and no lumps are left.

This step is what makes this bundt cake recipe so quick and easy. No need to wait for your cake to cool before icing! After de-molding your bundt cake onto a platter or cake stand, simply drizzle or pour the icing over the top of the hot cake. Allowing some icing to drip down the sides of the cake gives it a great look.
